The wannabe homemade cake

Alright so I’m pretty sure we’ve all been there. We raise our hand and say, “yes, I’ll bring a homemade dessert to our next gathering!”. Then everyone cheers and you go home and dream about all the pies and cupcakes you’ll make and how awesome it’ll be and everyone will want the recipe, yada yada yada. Then you wake up and it’s 10 days later and the party is that same day, but you have NO time to bake anything and you don’t want to buy an already made dessert so- what do you do?? You make a wannabe homemade cake 😉

Well maybe we all haven’t been there, but I have! And when that happened to me, I combined buying with making.

Enter the extremely versatile Angel Food Cake. Most grocery stores sell them plain and they are perfect for making them absolutely awesome. By themselves they are a little plain, not so rich etc., but that’s where the homemade part comes in! If you’ve ever bought from one of those really nice bakeries and you’ve seen those deserts that are messy and all over the place but goodness do they look divine and decadent- then you know, messy is the way to go! You want to turn that Angel cake into the most amazing looking (and tasting) version of itself it could ever be!

Start with the fruits. The norm are all the berries, you know strawberries, blueberries and blackberries. If you want a really exotic looking cake, then try the not so norm fruits like Figs (which add really pretty color) or guava etc.

Then add your sweet. You can do chocolate, which is what I did. Or honey, white chocolate, caramel or you can make a syrup. Of course you can add whip cream as well, but remember to add that last since it melts extremely quickly.

Assemble your cake however you’d like. For mine I just started with the fruit, then drizzled the chocolate all over. Now this is where I say the messier the better 🙂

The last are your toppings- to me these are what really make this cake stand out. If you want to go all out add nuts, lots of different kinds of nuts. I added sunflower seeds and pistachio seeds. You can also break up bits of pretzel or chocolate covered walnuts and crumble them over everything.

Then all you have to do is stand back, look at your creation that took you literally 7 minutes to assemble, and rush out the door to your party! See, everyone can make a “homemade” cake!
