My favorite meal of the day is breakfast. There are those kinds of people that can skip breakfast and go on with their day with just lunch and dinner. And then there is me- I am definitely not one of those people. I love breakfast. Breakfast alone, breakfast dates, breakfast early, and sometimes even brunch- all the breakfasts. That’s why it shouldn’t come as a surprise that I also have a deep sticky love for pancakes.
Since I can remember my mom has made pancakes every Saturday morning. Every Saturday morning we’d roll out of our beds, make our way to the kitchen, plop down and my mom would serve us box-mix pancakes. Of course, since then my pancake palate has been ever so slightly refined but every once in a while a box-mix pancake still graces my plate and I STILL LOVE THEM. Especially on these days where the weather has gone from, I’m-melting-and-it’s-October, WHY?! - to - It’s-freezing-and-wet-so-I-need-every-form-of-comfort-ever, overnight.
And that’s how these bad boys were formed.
It’s literally the easiest, most simple recipe ever. Nope, they’re not from scratch, they’re from a deep-rooted need for pumpkin pie for breakfast (because it’s fall) and because making a real pumpkin pie is haaaard (but it’s on my Fall Bucket List so…yeah, we’ll see).
Easiest Pumpkin Pie Pancakes
The easiest, most simple recipe to make a quick batch of Pumpkin Pie Pancakes for the Fall!
Ingredients
- 1 Pancake Box Mix I used Trader Joe's Multigrain Baking & Pancake Mix
- 1 Egg
- 1 cup Milk (or choice of Milk alternative)
- 2 tbsp Pumpkin Puree
- 1/4 tsp Pumpkin Pie Spice
- Cinnamon spice optional
- Butter optional
- Maple Syrup optional
Instructions

Prepare your pancake mix as directed on the box.

Add the two tablespoons of Pumpkin Puree, mixing well.

Add the Pumpkin Pie Spice to the batter.

According to box, makes about 12-15 4 inch size pancakes.

Once done, top pancakes with a sprinkle of cinnamon, a pat of butter, and a generous dose of maple syrup! Enjoy!
I’m sure there’s some kind of deeper meaning behind pancakes (Jesus did eat breakfast with his disciples often…) but for now, I’ll just leave it at pancakes make me happy. I mean, it’s a cake. In a pan. Need I say more?!
