Monster Rice Crispy Treat Pops
The other day I ate a rice crispy treat. I think I hadn’t eaten a rice crispy treat in like, 2 years! I know crazy. But I thought, man, who doesn’t love a good rice crispy treat? I mean they taste good, they basically have two ingredients in them (sugar and more sugar), and they transport us back to our childhood days when things were simpler (or so we say). So, while I was eating my delicious albeit pre-packed snack, I decided I’d make my own. And like I almost always do, I decided I’d take them to the next level. Hehehe!
So after some thought I came up with the MONSTER rice crispy treat. And to make it even better, I popped it on a stick. If this concept is making your sugary heart beat, then read on! I promise you won’t be disappointed 😉
First, gather your ingredients.
I used:
- Rice Crispy cereal
- Fruity Rice Crispy cereal
- mini marshmallows
- chocolate chips (mine were dark chocolate, yum)
- Coconut flakes
- white chocolate chips
- mini m&m’s
- lollipop sticks (you can use popsicle sticks too)
- a pan to spread the treat
- aluminum foil
Start off by melting your marshmallows in the microwave in increments of 30 secs. I used a whole bag of mallows.
Once you get the melted marshmallows to the consistency you like, stir in about 2 cups of cereal and mix!
This is where it gets really sticky.
Make sure to mix as best as you can so that all the cereal gets coated evenly.
And, yes, you will get a hand cramp but press on!
Once you think you’ve got it all good and mixed, dump the mix out into a parchment lined pan and spread evenly with the spoon or spatula. Let cool.
Once cool, you can put a parchment paper on top and press down to make it even. Don’t press too hard or it’ll get it too tight and then the flakes are hard. No one likes to scrape the top of their mouths! Wait about 20 mins and then cut into bars! Pop the stick in ’em and your done!
Now for the REAL treat! You know what i’m talkin’ bout chocolate lovers!
Start off by doing the exact same rice crispies with the regular cereal.
Once you’ve let it cool and pressed it evenly, cut into big squares and push the lollipop stick in. Since my squares were pretty massive, I stuck 3 sticks in for reinforcement. I guess you can cut into whatever size squares you like, but big squares mean more chocolate!
Okay, now the chocolate. Unfortunately no photos were taken during this part. I was too busy lickin’ my lips and “tasting” everything to make sure it was good. Oh, and it was good wink-wink. Basically, you melt the chocolate in a bowl in the microwave. Once in a more watery consistency, you plop the crispy pop halfway in and pull it full of chocolate. Place it on the lined parchment sheet for just a sec while the excess chocolate drains off. Once you think that it’s ready, dunk it in flakes of coconut or m&m’s and quickly place back on the sheet. Don’t worry if the m&m’s slide off (because they will) just keep adding more and with time they’ll stick.
Do the same with all the other pops, mixing and matching chocolate and toppings. I did a combo of white chocolate with m&m’s and dark chocolate with coconut flakes. They were both AMAZING!
